Salad Greens are any tender green variety that is eaten raw. Salad greens can grow as heads like somelettuce varieties or leaves like arugula. Many leafy varieties will regrow once cut or continue growing as outer leaves are harvested. Roots tend to be shallow but plants prefer well-drained soil and adequate irrigation. Most salad greens prefer cooler temps and do not thrive during long, hot days.
